American Style Pancakes with Wild Soft Fruits

The most important meal of the day – breakfast! And this sweet treat won’t let you down. The pancakes are light and fluffy and full of goodness and the richness and flavour of buttermilk. Add your favourite wild fruits and you know that they are also very good for you, not that that would have mattered anyway!

American style pancakes with Wild Soft Fruits Recipe


Ingredients:

150g Plain Flour

2 Tsp Baking Powder

¼ Tsp Bicarbonate of Soda

25g of Golden Caster Sugar

2 Free Range Eggs

100ml Buttermilk

25g Butter (melted)

150g Wild Soft Fruit such as Wild Strawberries, Bearberries, Raspberries, Blackcurrants, Wild Blackberries or Bilberries. You can even use Elderberries but do mix them with another fruit to reduce their tartness.

1 Tbsp Crème Fraiche

Little Honey

Flavourless oil such as Sunflower for frying


In a mixing bowl sift your flour and add the baking powder, bicarbonate of soda and caster sugar. In a separate bowl add your wet ingredients this is the eggs, buttermilk and melted butter. Now simply mix the wet and dry ingredients together and whisk until thoroughly combined.

Little tip now, if you can make your batter in advance do! If you are eating these pancakes for breakfast, get up and mix the batter and then store in the fridge for at least half an hour (really benefits if you do it the night before) this will help them puff up during cooking.

Now heat a large frying pan with a little cooking oil and using a large serving spoon blob two or three (depending on the size of your frying pan) large portions of the mix into the pan. Make sure that you leave space between the pancakes as they will spread!


Now you should have two or three little pancakes cooking, now its time to add our fruit, simply spoon it on top if the little pancakes so that it gets absorbed onto the pancakes surface, we want them to nestle on top but sink in slightly so when we turn them they are hold in place and don’t start to roll out around the pan. After 1 or 2 minutes you’ll see that the pancake is cooking and the top will begin to bubble and puff up. When the bottom is cooked you can turn it and allow the top to cook for a minute. Remove the cooked pancakes and place them on a baking tray in a gently warm oven and repeat the cooking process until you run out of mixture and Wild Fruit!


I like to sweeten a little Crème Fraiche with honey and then drizzle it over the pancakes with liberally sprinkled uncooked fruits, this just adds an extra twist of luxury that lets you know you are eating something quite special.
